Spirulina Protein and Processing: What the Cited Research Shows

QUICK SUMMARY

The cited fresh-versus-dried Spirulina paper measured extracted compounds, not protein denaturation or human health effects.

Research note: The sources previously linked here do not establish that fresh-frozen Spirulina protein is more functional for people, or that dried Spirulina protein is nutritionally damaged.

What the cited comparison studied

Agustini and colleagues (2015) compared selected compounds extracted from fresh and dried Spirulina and measured laboratory antioxidant activity. It did not test protein structure, protein digestibility, or health outcomes in people.

About protein denaturation

Denaturation describes a change in a protein's structure. It does not, by itself, establish that a food's protein has become harmful or that its nutritional value has been lost. The result depends on the protein, processing conditions and the property being measured.

What remains unproven here

The sources cited in this article do not provide a product-specific comparison of SPRU and dried Spirulina for protein structure, digestibility or nutritional outcomes. We therefore cannot use them to claim that one form delivers “functional” protein and the other does not.
